Blackbird Texas BBQ Seitan Shreds Sandwich
Blackbird Foods Recipe
Serves 2
INGREDIENTS
1 pack 8oz Blackbird Texas BBQ Shredded Seitan
Optional: 3–4 tbsp BBQ sauce
2 potato buns
2 cups cabbage mix
1/2 cup shredded carrots
3 tbsp vegan mayo
1 tbsp apple cider vinegar
1 tsp maple syrup or sugar
Salt and pepper to taste
METHOD
Prepare coleslaw: Add cabbage and carrots to a bowl. In a small bowl, whisk together vegan mayo, vinegar, and maple syrup. Pour dressing over the veggies and toss to combine. Season with salt and pepper. Chill 10 minutes before serving.
Warm a skillet over medium heat and cook seitan shreds for 3–4 minutes until lightly browned. If desired, stir in extra BBQ sauce.
Toast potato buns.
Layer Texas BBQ seitan onto each bun and top generously with coleslaw.
Enjoy immediately.
