Blackbird Foods Recipe

Makes 2 Sandwiches

INGREDIENTS

  • 1 pack 12oz Blackbird Original Seitan Block, sliced into two filets

  • 2 Vietnamese baguettes or small sub rolls

  • 1 small cucumber, thinly sliced

  • 1 handful cilantro sprigs

  • 1/4 cup vegan mayo (add 1-2 tsp sriracha for spicy mayo)

Pickled Veggies:

  • 1 carrot, julienned

  • ½ daikon radish, julienned

  • ¼ cup rice vinegar

  • ¼ cup water

  • 1 tbsp sugar

  • ½ tsp salt

METHOD

  1. Make the pickled veggies: In a small bowl, whisk together rice vinegar, water, sugar, and salt until dissolved. Add carrots and daikon, toss well, and let sit for at least 20–30 minutes (or overnight in the fridge).

  2. Heat a pan over medium-high heat with a bit of oil. Add seitan filets and cook until golden and crisp on the edges, about 3–5 minutes per side.

  3. Optional: Mix vegan mayo with sriracha.

  4. Assemble the bánh mì:

    • Slice baguettes lengthwise and lightly toast them.

    • Spread spicy mayo on both sides.

    • Layer seitan, cucumber slices, drained pickled veggies, and fresh cilantro.

  5. Press the sandwich slightly, slice, and enjoy!
