Blackbird Rosemary Garlic Seitan Reuben

Blackbird Foods Recipe

Makes 2 Sandwiches

INGREDIENTS

  • 1 pack 8oz Blackbird Rosemary Garlic Shredded Seitan

  • 4 slices rye bread

  • 1/2 to 1 cup sauerkraut, drained

  • 4 slices vegan Swiss or provolone-style cheese

  • 2–3 tbsp vegan Thousand Island dressing, store bought or recipe below

  • 1–2 tbsp vegan butter or oil for grilling

  • Optional: caraway seeds, dill pickles on the side

Thousand Island Dressing

  • 1/2 cup vegan mayo

  • 2 tbsp ketchup

  • 1–2 tbsp sweet pickle relish

  • 1 tsp white vinegar or lemon juice

  • Pinch of salt

METHOD

  1. Make Thousand Island Dressing. Stir all ingredients together in a small bowl. Refrigerate 15 minutes to let flavors meld.

  2. Heat a skillet with a splash of oil. Sear Rosemary Garlic Seitan Shreds for 3–4 minutes until browned on both sides.

  3. In the same pan, add the sauerkraut and warm it briefly, or heat it separately.

  4. Spread vegan Thousand Island Dressing on each slice of rye. Layer vegan cheese, seitan, and warm sauerkraut. Top with the second slice of bread.

  5. Heat a skillet over medium. Melt vegan butter, then grill each sandwich for 3–4 minutes per side, pressing gently, until the bread is crispy and the cheese is melty. Slice in half and serve hot with pickles.
