Blackbird General Tso’s Crispy Tofu Tacos

Makes 4 tacos
INGREDIENTS
1 pack 8oz Blackbird General Tso’s Crispy Tofu
4 Flour Tortillas, taco-sized
3 cups Shredded Coleslaw Mix (Purple Cabbage, Green Cabbage, Carrots)
2 tablespoons Apple Cider Vinegar
1 tablespoon Maple Syrup
1 teaspoon Dijon Mustard
¼ teaspoon Salt
¼ teaspoon Black Pepper
¼ teaspoon Garlic Powder or 1 small clove fresh garlic, minced
¼ cup Vegan Mayo
2 teaspoons Gochujang
METHOD
Whisk together shredded coleslaw mix with apple cider vinegar, maple syrup, Dijon mustard, garlic, salt, and pepper. Refrigerate coleslaw for at least 1 hour.
In a small bowl, mix vegan mayo with gochujang for a spicy mayo.
Air fry the Blackbird General Tso’s Crispy Tofu at 400°F for 4–5 minutes, until warm and crispy. Reserve the remaining sauce from the package.
Warm tortillas, spread with spicy mayo, top with slaw and crispy tofu, then drizzle with extra General Tso’s sauce if desired. Serve immediately.
