Fried Seitan Sliders

Serves 6

INGREDIENTS

For the Fried Seitan

  • 1 package of original seitan 

  • 1 cup dairy free milk

  • 1 Tbsp Apple cider vinegar

  • 1 cup AP flour 

  • 1 tsp onion powder

  • 1 tsp garlic powder 

  • 1 tsp paprika

  • 1 tsp cayenne  

  • 1 tsp salt

  • 1 tsp pepper

  • 1 cup canola oil

For the cole slaw 

  • 1 cup shredded brussel sprouts 

  • ½ cup chopped apple 

  • ¼ cup vegan mayonnaise 

  • 1 tsp apple cider vinegar

  • 1 tsp dijon mustard

  • 1 tsp agave

Other 

  • Slider buns

  • Sliced pickles 

METHOD

  1. Brine seitan in milk and vinegar for 1 hour in the fridge 

  2. Make brussels sprout slaw: shave brussel sprouts and slice apples thin, mix together with remaining ingredients, cover and refrigerate

  3. Mix flour with seasonings and set aside 

  4. Heat oil in pot to 325 degrees

  5. Remove seitan from brine and place into flour mixture, fully cover in flour, place back in brine and dredge in flour again, fry at 325 in oil until golden brown, roughly 5 minutes each side 

  6. Place on paper towels to drain 

  7. Toast slider buns in the oven until golden brown 

  8. To assemble: spread vegan mayonnaise on both sides of slider bun, add pickles, then chicken, then top with coleslaw, serve immediately
