A plate with pasta in plant based sausage and cheese sauce, served next to baking dish with remaining pasta in it. topped with breadcrumbs and remaining sausage.

Blackbird Foods Recipe

Serves 6

INGREDIENTS

For the cheese sauce 

  • 3 Tbsp vegan butter

  • ½ onion, chopped 

  • 2 cloves of garlic, chopped 

  • 1 1/2 cup plain dairy free milk 

  • 1/2 cup plant based sour cream

  • 1 Tbsp ketchup 

  • ½ cup soaked cashews 

  • 1 Tbsp nutritional yeast 

  • 1 tsp onion powder

  • 1 tsp garlic powder 

  • Salt and pepper to taste 

Remaining ingredients 

  • 1 package of original blackbird seitan 

  • 2 cups macaroni noodles

  • 1/2 cup breadcrumbs

METHOD

  1. Make cheese sauce by sauteing onions and garlic in 2 Tbsp of vegan butter until cooked, add to blender with remaining ingredients, blend until smooth and set aside 

  2. Cook noodles according to package directions and crumble sausage 

  3. Preheat oven to 350

  4. Saute 1/4 cup crumbled sausage and breadcrumbs in remaining butter until breadcrumbs are golden brown, set aside 

  5. In a large bowl, mix noodles, cheese sauce and remaining sausage together, place in a sprayed baking dish, top with breadcrumbs and sausage 

  6. Bake at 350 for 20 minutes
