Vegan Meatball Sub

Blackbird Foods Recipe

Serves 3

INGREDIENTS

  • Blackbird Foods Seitan Meatballs (Recipe Here) Make into nine large meatballs

  • 3 Italian Rolls

  • 4-5 tablespoons Vegan Butter

  • 1- 1 1/4 cups Marinara Sauce

  • 3/4 cup Vegan Mozzarella Cheese or Cashew Parmesan*

  • Chopped Parsley (Garnish Optional)

METHOD

  1. Make nine large Blackbird Foods Seitan Meatballs and set aside.

  2. Cut Italian Rolls in half and butter each side with about one tablespoon per roll. Heat skillet on medium heat and add butter to pan. Place roll face down in pan for about 2 minutes until slightly crispy.

  3. Continue with other rolls as you heat Marinara Sauce in saucepan.

  4. Spread 1/3 cup of Marinara Sauce on each roll. Place three seitan meatballs on each roll. Spread a bit more sauce on top of the meatballs. Sprinkle 1/4 cup Vegan Mozzarella Cheese or Cashew Parmesan* on top.

  5. Optional- Place meatball subs in broiler to melt Vegan Mozzarella Cheese. Make sure to keep an eye on it as it’ll burn quickly. Note: Cashew Parm will not melt in the broiler.

  6. Serve and enjoy!

NOTES

  • Cashew Parmesan Recipe- Combine in blender: 1 cup Roasted Cashews, 1 tablespoon Nutritional Yeast, 1/4 teaspoon Garlic Powder, 1/8 teaspoon Ground Pepper, 1/8 teaspoon Salt. Blend until cashews are broken into small pieces.
