Blackbird Original Crispy Tofu Burrito with salsa, black beans, rice

Makes 2 Burritos

INGREDIENTS

  • 1 pack 8oz Blackbird Original Crispy Tofu

  • 2 large burrito size flour tortillas (10-12”)

  • 1 cup cooked brown rice

  • 1 15oz can Black Beans, drained and rinsed

  • ½ cup salsa of choice, plus more for serving

  • 1 small clove garlic, minced

  • ½ tsp ground cumin

  • ¼ tsp smoked paprika

  • Pinch of salt

  • 1 tsp olive oil

  • Optional Fillings: ¼ cup shredded vegan cheese, sliced avocado, fresh cilantro, hot sauce

METHOD

  1. Air fry the Blackbird Original Crispy Tofu at 400°F for 4–5 minutes, until warm and crispy.

  2. In a small saucepan over medium heat, add the olive oil, garlic, cumin, and paprika. Cook 30 seconds until fragrant. Add the black beans and 2 tbsp water. Simmer 3–4 minutes, lightly mashing about a quarter of the beans with the back of a spoon for a creamier texture. Season with salt.

  3. Cook the brown rice.

  4. Warm the tortillas one at a time in a dry skillet, 15 seconds per side, so they're pliable.

  5. Build the burritos. Lay a tortilla flat. In the lower third layer: ½ cup cooked brown rice, half the black beans, half the Original Crispy Tofu, 2–3 tbsp salsa, and any optional fillings.

  6. Fold the sides in, then roll tightly from the bottom up, tucking as you go. Repeat with the second tortilla. Place burritos on a warm skillet, burrito seam-side down. Toast 2 minutes per side until golden and crackly. Slice and serve.
