Chick’n Taquitos

A plate of fried taquitos, filled with plant based chicken, refried beans, and plant based cheese, with salsa on top

Blackbird Foods Recipe

Makes 10 taquitos

INGREDIENTS 

  • 10 corn tortilla 

  • 1 package of Blackbird Chili Lime Seitan

  • 3 Tbsp taco seasoning

  • 1 can refried beans 

  • ½ cup vegan cheese blend 

  • ½ cup vegan sourcream 

  • Pico de gallo 

  • Cilantro for garnish 

  • Lime wedge for garnish

 

METHOD

  • Warm tortillas in the microwave for 30 second so they are easier to work with

  • Lightly Saute seitan with 2 Tbsp taco seasoning and shred using two forks 

  • Add 1 Tbsp refried beans, a pinch of cheese and 2 Tbsp of seitan to each tortilla 

  • Roll tortilla up and fry seam side down, in ¼ inch oil, flipping after 3 minutes, drain on paper towels until ready to serve 

  • Mix sourcream and remaining taco seasoning and serve along taquitos, garnish with cilantro and pico de gallo
