Vegan Gumbo

vegan gumbo with rice and scallions

Blackbird Foods Recipe

Serves 3-4

Prep: 30-40 Minutes | Cook: 1 Hour

INGREDIENTS

  • 1/2 cup Flour

  • 1/3 cup Vegetable Oil

  • 2 stalks of Celery, diced

  • 1 Yellow Onion, diced

  • 1 Green Pepper, diced

  • 1 Yellow Pepper, diced

  • 2 Cloves Garlic, minced

  • 2 Green Onions, chopped

  • 2 tbsp Minced Parsley, chopped

  • 2 Tbsp Cajun Seasoning

  • Salt and pepper to taste

  • 1 box of Original Blackbird Seitan, roughly chopped

  • 4 cups Vegetable Stock

METHOD

  1. Dice all your vegetables, herbs, and seitan

  2. Make roux, in a large pot, add Oil and Flour, cook, stirring continuously until color resembles that of melted milk chocolate. Roughly 10 minutes on medium high heat

  3. Add vegetables to roux and stir to combine well and cook for 5 minutes, add herbs and seasoning and mix well, add seitan and mix again

  4. Add half of your vegetable stock and stir to evenly combine, add remaining half, cover and cook on medium low for 1 hour

  5. Serve over rice
