Thai-style larb with seitan and mushrooms
Start by heating olive oil or some other neutral oil in a pan on medium heat. Add:
- 1/2 Onion, chopped 
- 3 cloves of garlic, chopped 
Once the onions and garlic become soft and fragrant, add:
- 3/4 container of white mushrooms, chopped 
- One package of Blackbird Foods Original Seitan 
Once the mushrooms begin to sweat, mix in:
- 1 1/2-2 tablespoons of soy sauce (to taste) 
- 1 tablespoon vegan fish sauce 
- 1 teaspoon of Sriracha 
- 1 tablespoon of brown sugar 
Mix all ingredients until well combined, and there is not too much spare liquid in pan. Plate with:
- White rice 
- On a bed of spring mix 
Top with:
- Pickled red onions 
- Lime
