Smoky Seitan Chili

INGREDIENTS

For the Seasoning Mix…

  • 1 Tbsp Chili powder

  • 1 Tbsp Cumin

  • 1 tsp Onion powder

  • 1 tsp Garlic powder

  • 1 tsp Smoked Paprika

  • 1 tsp Cayenne

  • Salt to taste

  • Pepper to taste

For the Chili…

  • 1 Red Bell Pepper, chopped

  • 1 Green Bell Pepper, chopped

  • 2 large cloves of Garlic, chopped

  • 1 Yellow Onion, chopped

  • 1 box (7.5oz) Blackbird Chili Lime Seitan, chopped

  • 4 Adobo Peppers, chopped

  • 1 Tbsp Adobo Pepper liquid

  • 1 15.5oz can Black Beans, rinsed and drained

  • 1 15.5oz can Kidney Beans, rinsed and drained

  • 1 14.5 oz can Fire Roasted Tomatoes

  • 1 10oz can Diced Tomatoes with Green Chilis

  • 2 cups Vegetable Stock (or water)

  • 1 sliced Avocado

  • 1/4 cup minced Cilantro

  • 1 Lime, cut into wedges

METHOD

  1. Combine seasoning mix and set aside

  2. Chop Vegetables and sauté in large pot on medium high heat until soft (5-10 minutes)

  3. Chop 1 7.5oz box of Blackbird Chili Lime Seitan and add to pot with vegetables

  4. Add seasoning mix and 4 minced adobo peppers with sauce to pot and stir to evenly combine

  5. Add beans and tomatoes to pot and stir

  6. Add water or veggie stock until chili has reached desired consistency, cover and simmer on low for 2 hours

  7. Serve topped with avocado, cilantro, and lime
