Seitan Pita Sandwhich

Serves 2

INGREDIENTS

For the tzatziki 

  • ½ cup cucumber, sliced thin 

  • 1/2 cup plant based sourcream 

  • 1/2 cup plant based mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped dill

  • Salt and pepper to taste

  • OPTIONAL: 1 grated garlic clove

For the pickled red onion 

  • ½  cup Red onion, sliced 

  • 1 cup Vinegar 

  • 2 tbsp sugar

  • 1 tsp salt

  • 10 peppercorns 

For the sandwich 

  • Pita bread

  • Hummus 

  • Tzatziki 

  • Romaine or iceberg lettuce, chopped

  • Tomato, sliced

  • Red onion, pickled 

  • Rosemary garlic or original seitan, sauteed in oil 

METHOD

Make ahead

  • Slice red onion and put in heat safe container

  • Bring vinegar to a boil, add sugar, salt and peppercorns, pour overtop of red onions, cover and place in fridge until ready to use

  • Slice cucumbers, coat them in salt and place in strainer to remove excess moisture, let sit for for 1 hour, rinse with water and dry using paper towels, mix together remaining tzatziki ingredients with cucumbers and place in fridge until ready to use 

Assembly 

  • Slice seitan thinly and sauté in oil on medium heat for about 7-10 minutes, stirring occasionally

  • Spread tzatziki on one piece of pita and hummus on another, arrange remaining ingredients on pita and serve
