Jack-O-Lantern Stuffed Peppers

Blackbird Foods Recipe

Makes 4 Stuffed Peppers

INGREDIENTS

  • ½ Onion, chopped

  • 2 cloves Garlic , minced

  • ¼ cup diced Tomatoes with Green Chilies 

  • 2 tablespoons Tomato Paste

  • 2 teaspoons Cumin

  • 1 teaspoon Chili Powder

  • 1 teaspoon kosher Salt

  • ¼ cup Black Beans

  • ¼ cup Corn

  • 1 cup cooked Long Grain Rice

  • 1/4 cup Cilantro leaves , chopped plus more for garnish

  • 4 Orange Bell Peppers

  • Lime Juice to garnish

METHOD

  1. Cook 1/2 cup Dry Rice according to package instructions (Yields 1 cup cooked rice)

  2. Bring a large pot of water to boil, cut the tops off Orange Bell Peppers and remove the seeds

  3. Using a small knife, cut the Jack-O-Lantern faces in the peppers just like you would carve a pumpkin. Place peppers into boiling water and cook for 5 minutes

  4. Remove peppers from water and place in an ice bath 

  5. Sauté Onion and Garlic until soft, add Chili Lime or Original Seitan, Tomato Paste and seasonings. Stir to combine 

  6. Add drained Tomatoes, Beans, Corn, Cilantro and Cooked Rice, stir to combine 

  7. Pat dry the peppers and place in baking dish, fill peppers with rice mixture and cover with the tops 

  8. Bake at 350 for 15 minutes

  9. Serve garnished with Lime Juice and Cilantro
