Blackbird Chick’n & Waffles
Ingredients
- 1 8oz pack Blackbird Original Seitan 
- 6 tablespoons vegan butter 
- 2 cups all-purpose flour (+.5 cups for frying) 
- 1 tbsp sugar 
- 1 tsp baking powder 
- 1 tsp fine salt 
- ½ tsp baking soda 
- 2 cup plant-based milk 
- 1 tbsp lemon juice 
- 4 large eggs / egg replacer equivalent 
Directions
- Melt butter, set aside. 
- Mix dry ingredients and wet ingredients in separate bowls [dry: flour, sugar, baking powder, salt, baking soda.][wet: melted butter, milk, lemon juice, egg replacer.] 
- Heat a pan with a shallow layer of neutral oil. 
- Dip Seitan into flour then waffle batter and fry on each side until crispy. Set aside on paper towel. 
- Pour batter in waffle iron according to the iron’s instructions. 
- Top with your chick’n, and pour over maple syrup. - Note: To save on time, feel free to use any waffle mix of your choosing.
